Ingredients:
For the Sweet Potatoes:
- 2 medium sweet potatoes, cubed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon chili flakes (for a spicy kick)
For the Beef:
- 400g lean ground beef (or turkey for a leaner option)
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon black pepper
Toppings:
- 1 cup cottage cheese
- 1 avocado, sliced
- 1/4 cup hot honey
- 1tsp chilli flakes – or to your liking of spice
- Extra chili flakes for garnish
- Green onions for garnish
Directions for Beef and Sweet Potato Bowl:
- Roast the Sweet Potatoes – Preheat the oven to 200°C (400°F). Toss the cubed sweet potatoes with olive oil, garlic powder, smoked paprika, cumin, chili powder, salt, black pepper, and chili flakes. Spread evenly on a baking tray and roast for 20-25 minutes until golden and tender.
- Cook the Beef – While the sweet potatoes are roasting, heat a pan over medium heat. Add the ground beef and cook, breaking it up as it browns. Add salt, garlic powder, smoked paprika, cumin, chilli powder, and black pepper. Stir well and cook until fully done.
- Assemble the Bowl – Divide the roasted sweet potatoes into bowls. Top with cooked beef, a generous scoop of cottage cheese, and sliced avocado.
- Drizzle & Garnish – Finish with hot honey drizzle and extra chili flakes. Add chopped green onions for a fresh bite.
